I mean like head size-Choice or something. I have too expensive knives that I like and do not want to spoil. There is an electric scraper will not do anything wrong and how to accentuate the good knives are supposed to be sharpened and if yes, please list type. (I’m German and Asian-style knives from different angles is also very nice. Including the possibility of a single bevel)
